My garden is producing well even with the drought in the midwest! Cheers!<br /><br />Zucchini Salad<br />2/3 cup apple cider vinegar<br />3 Tablespoons champagne vinegar<br />1/3 cup oil (I use olive oil)<br />1/2 cup sugar<br />1/2 tsp pepper<br />1 tsp salt<br />1/2 cup diced onion<br />1/2 cup diced celery<br />1/2 cup chopped bell pepper<br />5 small zucchini, sliced<br />1 jar (4oz) diced pimiento<br /><br />Combine all ingredients. Let marinate 5-6 hours.
